Chocolate Cupcakes with Peanut Butter Cookie Dough and Toasted Marshmallow Frosting

I cannot take credit for this genius cupcake.
I credit Joy the Baker. (And Pinterest, which led me to her.)
But…. I can show you how much fun I had trying out her recipe today!
This cupcake is moist, dark chocolate cake stuffed with peanut butter chocolate chip cookie dough(!!!)…
Then topped with a scrumptious homemade marshmallow frosting…
Which is then toasted to perfection under the broiler. (Or using my preferred method, a hand-held creme brulee torch. Fun!)
The resulting cupcake is (as you can imagine) an over-the-top splurge. Perfect for this time of year when every day is a celebration! (I do recommend halving the recipe though. It would not be wise to have 24 of these puppies lying around your house.)
This would be a really fun thing to make the next time you’re baking in the kitchen with your kiddos or cooking with girlfriends! You can assign the different components to different people based on their skill level (the cookie dough is super simple, whereas the marshmallow frosting is a fun challenge! Not difficult at all but it requires a little more attention.)
I particularly liked the “toasted” look I was able to achieve with the blowtorch.. but like I said, you can also use the broiler setting of your oven and that works perfectly well! (The picture below shows the slight difference in appearance you’ll get depending on which method you use. The two cupcakes on the far left were toasted under the broiler, and the others in the photo were toasted using a blowtorch.) Whatever you do, keep a close eye on these while toasting because they can go up in flames like that!
